As part of our Community Spotlight, we sat down with Madeline Krantz of New World Cafe to talk about her craft, passion and vision for her business, as well as how Change has helped her since opening in 2012.
I am:
Madeline Krantz, Chef and Co-Owner at New World Cafe. I create 100% vegan dishes using all whole food ingredients.
My background:
I didn’t go to culinary school, but when I became vegan, I spent every free moment experimenting in the kitchen and learned to cook intuitively.
Most importantly though, my partner and I have a love for animals and want to do something to act against the grain of animal cruelty, as well as show that a business can run in a way that isn’t conventional but experimental and dynamic.
My craft philosophy:
My philosophy is that a vegan dish should be flavorful, colorful, and satisfying, while still being very pure. I make both simple grain bowls where the ingredients are very visible, and more labor intensive things-- like veggie burgers or “bacon” strips-- where those same simple ingredients (vegetables, beans, grains) are transformed into something new. The goal is to make both of these unusual, surprising, and exciting to eat.

Becoming a better baker. I’m working towards developing more recipes that are vegan and free of gluten, soy, and sugar.

Run smoothly. We are able to easily update it if needed, and it’s easy for our staff to learn. The appearance is very clean, and we keep it as simple as possible for quick transactions.

That we don’t have to worry if we have an issue - someone from the Change team can be over in minutes to help, or will answer emails very quickly. This takes the stress off. We really appreciate the personal attention Change is able to give.

Going off in new directions to be more than a restaurant. Doing more external events and more to help animals.
